ABOUT
Rebirth of a Tradition
Welcome to Bivalsete, where the finest portuguese oysters meet exceptional craftmanship and Sado’s purest waters. From Piguita, Setúbal, to any restaurant or bar who wants to deliver an incomparable experience of taste and sophistication.
Its origin is the result of a great legacy. During the 60s and 70s fishing was the family’s livelihood. “Cabo d’Aires” would take the workers to harvest the oysters at Sado’s estuary. The ships “Péricles,” “Mécia,” and “Glória do Sado” would then transport the fish caught by the trawlers for market sale. These were the golden years of the Portuguese Oyster, or “La Portugaise”, as the enthusiast French market used to call it. Bivalsete is born in 2010. After seven years of hard work and learning, the brand “Puras da Piguita” is created. The term “puras” was often used by clients requesting non-purified oysters, cultivated in the “Piguita” area. The name was then adopted for commercialization in both Portuguese and Spanish markets.
Today, we take great pride in knowing our oysters are celebrated for two main reasons: their unique flavor and exceptional quality!

PREMIUM OYSTERS
Bivalsete’s oysters are celebrated for two main reasons: their unique flavor and exceptional quality!
The unique flavour comes from the Piguita area’s choice, where they grow. Nature does extraordinary work here. The exceptional quality, on the other hand, comes from a long “affinage en claire process”, among other efforts. This is a common process for purification and quality improvement where oysters gain a more refined flavour, delicate texture and beautiful colouring. Depending on the duration of this process, oysters can be classified in three categories. At Bivalsete, however, only the last two, “Spéciale de Claire” and “Super Spéciale” oysters, are considered for delivery, with strong focus on the last. Only the best is delivered to the plate.

Fine de Claire
With an uniform shape, they have a translucent less fleshy mantle with soft consistency. One can expect an agreeable marine odour and a finished salty taste of brief duration.
Spéciale de Claire
With a consistent shape, they have an ivory-coloured and fleshy mantle with firm consistency. One can expect an agreeable marine odour and a finished salty but sweet taste of long-duration.
Super Spéciale
With a very consistent shape, they have an ivory-coloured and extremely fleshy mantle with very firm consistency. One can expect an agreeable marine odour and a finished salty but predominantly sweet taste of very long-duration.
